Coffee In Bălți is the boutique café on Independenței 35/2 in central Bălți — micro-roastery + café concept (beans roasted on site) with barista-owner Pavel Ovsianic (Moldovan Barista Championship 2023 champion). Espresso fine-tuned daily for humidity, dramatically-presented V60, plus experimental signature drinks (sea buckthorn latte, hibiscus mocha, rosemary espresso-tonic). Beyond coffee: daily-fresh desserts (mille-feuille, cinnamon roll, walnut banana bread), simple breakfast bowls and lunch sandwiches. Pastel interior with plants, marble tables, plugs at every chair, fast wifi. 18-35 crowd, informal coworking atmosphere. Northern Moldova most serious café.
